Where can one find your products ?
he products of Domaine de Leos are available in France, Belgium, and Switzerland at a selection of quality points of sale. If you wish to purchase our products from a store, do not hesitate to contact us via email (commercial(AT)domainedeleos.com) to find out the nearest point of sale to you.
Pay attention : These are independent partners who may only offer a portion of our range. If you are looking for a specific product, we encourage you to contact the point of sale in advance to verify availability before making the trip.
Is the Domaine de Leos open to the public?
No, not to date. But it will be, by appointment, once we have created the necessary equipment and arrangements to allow a visit to the Domaine in very good conditions. This should become a reality in the coming years.
Do all your products come from the Domaine de Leos?
No, not exclusively. It depends on the range and the products. For oils, in addition to the original H de Leos oil, coming exclusively from the Domaine de Leos, we have launched at the request of our customers a new range of oils “H de Leos “green fruity”, “fruity ripe” and “matured olives” from a selection of exceptional oils from our natural production basin. In order to maintain a high level of quality, these blends may vary from one year to the next. They can be made with some of the oils from Domaine de Leos if this is relevant in terms of quality. Note that this new range, which has been acclaimed by great French chefs, receives as many prizes and medals each year as that produced exclusively from Domaine de Leos. For wine, we will produce a range of wines from our estate. For the rosé and white Leos Cuvée Augusta, we have selected very high quality organic wines from our natural production basin and created a subtle blend between the natural freshness offered by Ventoux wines, the precise and elegant aromatics of those of the Luberon and the concentration and wealth of those of the Alpilles. For delicatessen products such as jams and our confit for example, we use wild thyme and lavender that grow on the Estate for all products and we select exceptional fruits, of course favoring nearby producers, at near L'Isle-sur-la-Sorgue in Provence (apricot, strawberries) or in Corsica (Clementine) whenever possible in terms of quality.
Where are your olives pressed and where are your oils bottled?
Under the supervision of the teams of the Domaine de Leos, the H de Leos oils are pressed and bottled by our partner, the Moulin Castelas (Baux de Provence).
What are the differences between "fruité vert", "fruité mur" and "fruité noir" oils?
We speak of a “green fruity” olive oil when the fruit is picked very early in the season, generally in October, and is “crushed” in the mill very quickly. It is characterized by a sensation of freshness, the presence of vegetal aromas and a spicy flavor in the mouth called ardence. When it is of high quality, a “green fruity” oil will have great aromatic power, a slight heat and a subtle bitterness extracted from the fruit which will allow it to adapt to all types of dishes. We speak of a “ripe fruity” olive oil when the fruit is picked at optimal physiological maturity, generally between November and December. “Ripe fruity” olive oil can have great aromatic richness if it is of quality, but it is less fiery and bitter than green fruity olive oil. Its aromas are sweeter, rounder but they can also accompany all types of dishes throughout the year. Finally, we say that an oil is “dark fruity” (also described as “traditional” or “old-fashioned taste”) when it is in fact “matured olive” oils. This corresponds to olives that are left to ferment before being crushed in the mill. When it is of quality, which requires a lot of mastery on the part of the miller, a “dark fruity” oil often gives off unique aromas of mushroom, truffle, olive paste, sourdough bread or cocoa. In reality, it is essentially a matter of taste and sensitivity to heat and bitterness.
Where are your delicatessen products made?
The thyme and lavender are picked, dried and destemmed at the Domaine de Leos. Under the supervision of the Domaine's director-oenologist, the jams and confit are made and bottled in Robion, just a few minutes from the Domaine de Leos, by La Roumanière, a social economy company with which we have developed a close partnership to create exclusive recipes for traditional jams and confit (cooked in a cauldron).
Where are the legal notices, terms of sale and privacy policy?
Does the Domaine de Leos work organically?
Yes. we have been using organic farming techniques since we acquired the estate in 2007. Before that, the property had lain fallow for over 50 years. We also have HVE3 (High Environmental Value) certification and will be converting to organic farming in 2022.
Why isn't Domaine de Leos certified organic?
Although we have worked using organic farming techniques since acquiring the Estate in 2007, we shared our equipment with producers who were not organic. There was therefore a risk of finding residues of unauthorized products in our agricultural equipment and machines. Today, we have had our own machines since 2021 but our products are not yet all certified organic because our operation is in the process of being certified and because we purchase some of the ingredients necessary for the development of our ranges from producers who they themselves are not all certified, even if they produce products of very high taste quality and they work using organic farming techniques. Our teams encourage them to become certified but it will take a few more years for this to become a reality, while maintaining the high taste quality of their products.
What appellations are found on the estate?
The oils from Domaine de Leos are AOP Provence and a large part of our vineyard is AOP Ventoux. However, our ambition to produce unique wines of very high quality pushes us to use grape varieties different from those of this appellatio This is why our wines are marketed as IGP Vaucluse.
Are your bottles engraved?
Yes. The bottles of Leos H oils have been engraved in the glass since 2020. Similarly, the bottles of our Leos Cuvée Augusta wine are screen-printed. This gives us an exclusive range of bottles for all our oils and wines.
Do you plant new vineyards?
Yes, because in recent years we have been able to make new acquisitions of high-quality land.
Will you plant new olive groves?
Currently no. We will expand the olive tree plantations in the coming years only if we can acquire very high quality terroirs near the Domaine de Leos.
What makes a honey "creamy"? How do you make a creamy honey?
“Creamy” honey is a honey naturally rich in glucose, which crystallizes more quickly than others. It is these very fine crystals that give the honey its creamy texture. To obtain a creamy honey, there are several techniques but the most traditional, the one which does not “degrade” the honey, is to stir it when it begins to crystallize knowing that the process can sometimes take several weeks depending on the type of honey and the temperature !
